saturday morning breakfast
yesterday morning i woke up early. not because the neighbor’s dog was barking or there was a lawn mower running or because the kids were being too loud running up and down the hallway. i got up early ON PURPOSE! 8am to be exact and i was completely excited to do it.
a couple of weeks ago, i found myself with 15 pounds of potatoes to use up. it was right before Thanksgiving and since we were traveling instead of hosting, i was not able to take advantage of the holiday to use them up. i came home and realized that i was going to need to use up these potatoes and fast in order to keep them from going to waste.
i was talking to the kids and running meal ideas by them and they immediately suggested making hash browns for breakfast on Saturday….. along with pancakes and eggs. and that is the reason i woke up early. and it was totally worth it :0)
Saturday morning breakfast used to be a sort of tradition for the kids and i. when their dad and i split, i made a huge effort to create a safe haven for them here in our home. so one the weekends they were with me, we had Friday night movie night followed by a big breakfast on Saturday morning. i am not sure why we stopped this part of our weekends together but it just sort of went by the wayside. when the kids suggested making breakfast again? i was all over it!
it was so much fun, especially when Luis made pancakes by himself for the first time :O) we all sat down together and tasted a new recipe we tried out for baked french toast and took turns weighing in on whether or not we should make the recipe again in the future. it felt good to enjoy that extra time with them and to remember that taking this kind of time is so important to all of us. i have become accustomed to and enjoy sleeping in on the weekends; especially on Saturdays after a busy week. but it also means that i’ve become accustomed to missing out on special times and special memories with the kids. and i really really don’t want to miss out on this kind of time with them.
