The first time I participated in this Carnival was also the first time I held a give away here on my blog.  I gave away an amazing cookbook then and this time I am sticking with a cooking theme.  I love to cook.  I love to bake.  I wish I had more time to do both…sigh….

I have 3 amazing kids all of whom I adore but one thing I have come to realize in the last couple of years is that I am seriously outnumbered. As I drive back and forth between 2 different schools, the karate and ballet studio, after school activities or games, and to whomever’s house they might be going to for the afternoon 3 to 1 can easily feel like 20 to 1!! With my own schedule, there are at least 2 nights each week that no one is home in the afternoon or evening to put something together for dinner.

Now, my waist line and my pocket book cannot afford to just pick something up on those nights. Instead, I do a little planning ahead and just throw something into my Crock Pot before we leave for the day.   By the time we all come home tired, hungry and some days a bit cranky, dinner is ready and waiting for us.  What I love best about my crock pot is that I can set the temp and the time I want it to cook and when it is done, it will automatically switch to a ‘Keep Warm’ setting.  This way, my dinner is not over cooked and is always ready to eat even if the cook time ended hours before we walked through the door.

    My biggest challenge is planning ahead. If I get home & there’s nothing that is ready & waiting for me in the crockpot, or something that I can throw together fairly quickly, I tend to graze & eat things that I shouldn’t. I’ve discovered that a programmable crockpot is what I need to make sure that meals are actually edible (meat not dried out) when I arrive home from work!

    My biggest challenge is finding meals that my husband can prepare– since I get home way later than he does! My crockpot is my best friend but it is very small and as my family grows it is getting harder to fit good meals into it!

    It is always a big challenge to make something that everyone will be happy with. When your kids get to the high school years, it seems they become more picky and one always feels the need to become a vegetarian (which I feel I should support). It is always a juggle.

    My biggest challenge is finding something we all like. My hubby is picky, I am picky and my daughter thank goodness she’s not to picky but it seems like the things my hubby loves, I hate and vice versa.

    My biggest challenge is that I don’t plan it out, and by the time I decide what we should eat, I realize the meat is frozen, or it takes 2 hours to cook, etc.! I do love the crockpot!

    I’d say it’s time constraints that work against me. That’s why I usually have dinner mapped out in the morning, at least I know what I will fix later in the day. That is, if I don’t use my crockpot, which I use 2x a week. What a great thing it is, but mine is so old! I need a new one desperately.

    i am currently in college, but all throughout middle and high school my mom had all 4 of us kids pick a night and make dinner once a week. my biggest challenge with that was underestimating the cooking time! there were many nights that it would be almost an hour later then when we wanted to eat (that was especially when i made macaroni and cheese.)

    my sister is getting married this coming summer and that crock pot would be a great thing for her!!

    My biggest challenge is making something and being able to keep it warm for my hubby. He is in the Army and some nights we do not know what time he is getting home. This would be perfect thing to help make dinners that are easily kept warm. Thank you.

    My biggest challenge is finding something different. Sometimes it seems like we are eating the same stuff all the time. I have good eaters that will eat a lot of different stuff.The other challenge is the same as everyone else I don’t want to spend hours in the kitchen .

    I have two kids and work a full time job and between my thirty minute commute, picking up kids, homework, and everything else a mother does, who in the heck has time to cook?!?! I use my crockpot AT LEAST once a week, usually more often than that. It is so overused that one of the handles broke OFF tonight so I would definitely love to win this pretty new one!

    My biggest challenge is similar to yours, in some ways. I have three sons and we always seem to have something going on, somewhere. So that’s part of it! I also have one son who would eat a tin can wrapped in bacon is we let him, one who will eat most everything except mushrooms and pepers and my third son (he has Asperger’s Syndrome) who eats something like 5 ingredients and that’s it! A hugely challenging thing for me is to find something that EVERYONE will eat!

    My biggest challenge is menu planning. If I know early in the day what I intend to cook I can begin preparations. Then later, I’m not running around with a screaming baby trying to get supper on the table. My husband is much happier when I plan well enough that I can greet him when he comes home with a smile. When I plan, that’s what happens.

    I’ve been wanting a crockpot for a while. My challenge is those nights I work late or have class till late and either have to plan ahead, defrost something that my husband will cook, hope the grocery store isn’t out of roast chicken, or whip up something very quick when I get home. The kids have usually eaten too many snacks by then anyways.

    Mine has become not the time but the dish itself. I have run out of ideas and I get tired of trying to figure it out. I have a few go to fast dinners but then I keep doing them over and over again. I got the Rachel Ray 30 minute meals for a little variety but sometimes it’s hard to get motivated to cook after a long day at work.

    I would have to say the biggest challenge these days is the number of brain cells going bye bye – lol. I seem to forget more things after #2 child arrived. That’s why I love cooking with my old crockpot. If I remember in the morning dinner is ready when we get back home. It’s in sad shape however and I keep a pair of pliers in the kitchen drawer since the handle fell off. Need to remember to get some glue. Thanks for the giveaway!

    I face many challenges in getting dinner on the table at night. I have a 2year old little boy who likes to help Nanee cook so I have to always be aware of where he is so that he doesn’t get burned. I also work weird hours this time of year so I have to prepare for meals when I’m not home that can be done either one pot, oven, or microwave. Anything else and the mess in the kitchen would never be cleaned up. I also have a family who shares very few tastes in common so I have to cook variety meals that will have something for everyone. Crock Pot meals are usually a winner every time.

    My biggest challenge is finding the time to make meals that everyone likes without it being TV dinners. it is hard to make a good meal when you have a time limit. I mean the you only have so many options with the quick fix meals and they get so boing after a while. My slow cooker stone crock is cracked and I sure so miss it. I would love to win a new one.     Variety.

    We tend to eat the same thing reheated for a few days. Then we make a new dish. Then we eat that for a few days. Prep, cleanup…it takes a lot of time. I wish I could get a base food down and inject more variety with new and easy sides!

    It is now 3 months that I have been diagnosed with gluten- intolerance (wheat, rye, barley), so it is avoiding gluten. It is in so many foods. So many foods I never thought like corn chowder, mash potatoes, cheap chocolate, and some ice creams.
    knowing what I can eat is hard, so I am stuck with very little choices, I know are OK.

    My husband recently broke the glass insert of my crockpot I so need a new one. Anyways the biggest challenge I have at dinner time is just getting everyone together at the same time. Between my hubby’s crazy work schedule, dance classes on different days for my daughters. Trying to get to the gym etc.. that is why I loved my crock pot so much dinner was still warm for everyone no matter what time they ate.

    Wow, you are so generous! I have been loving my crockpot lately… but I think it’s broke. It burned the last dinner I had and I even burned myself on the outside. I don’t think it was supposed to get that hot…
    My biggest challenge is remembering to take things out of the freezer on time so they can be thawed to start the crockpot meal in the morning! then I have to scrounge for a different meal. :(

Towards the end of the two week pay (military) we dont have a lot left in the cabinet to make a great meal.     My biggest challenges are 1. remembering to defrost whatever it is I’ll be cooking the next day, and 2. cooking enough to feed us dinner plus a couple days lunch, but not cooking so much that we have mass amounts of food!

    My biggest problem is the planning! I teach preschool from home in the afternoon until 3 and then piano and voice until five. So then I’m exhausted and rummaging through the cupboards at five (or not because I’m on the computer). Last week I did a menu plan for the week which worked good because I prepared more but this week not so good. Last night was corn dogs and tonight was pizza. Ugh.

    Dinner time just happens to coincide with the witching hour in our house. The kids are super cranky and bored and Mommy is counting down the minutes until Daddy is going to get home…it’s really hard to cook dinner with all the crying and whining!

    One of my challenges is that every evening is a different schedule. At times, we have kids in 2 or 3 different sports and I might be teaching late. It just makes things complicated.

    My biggest challenge is remembering to take something out of the freezer so it has time to thaw. I’m the one who says “what should I make tonight?” as soon as my tummy starts growling. By then it’s usually too late to defrost.

    My biggest challenge is that we are all going in different directions at different times now that our children are older.     My biggest challenge is time. Cooking a meal from scratch takes so long, so by the time everyone gets home and I start dinner it’s almost 7:00 sometimes before it’s ready. A crock pot would be great for that problem. My other problem is that I feel like I never have time to unwind from work since as soon as I get home I have to start cooking and then cleaning up after.     If I have done preps earlier, than things go smoothly, otherwise, every evening I feel like I don’t want to cook and go outside for dinner.but ultimately, I end up making something..which is not that bad either.

    My biggest challenge when it comes to weeknight dinners is coming up with something we will all like that is also not the same-old. I have trouble with my menu planning, getting stuck in a rut with the same dishes. I’d love to have a smart crock so I could plan more of my meals in advance and come home to yumminess!

    ok, on the weekends my wife and i are always taking the 2 kids out to the zoo or the aquarium or the childrens museum or somehting which takes all day, and being the one that does all the cooking….we always end up picking up somehting up on the way home….gets old really fast, with this baby set it up before you leave and bam you get home …done! a Fathers dream, fast and easy. i don’t know why i never thought of this before.

    My biggest problem is thinking of things that dont take long to cook. By the time I get home from work and the kids get home from school and sport practices, we ar all hungry. And cooking something that is going to take a few hours is out of the question. This crockpot would be great- I love the keep warm part.

    There is nothing about it that is not challenging…single parent, 2 kids under the age of 4, getting home at 6:00 or 6:30, one that refuses to eat cheese or any quick foods and one that only wants the quick foods. It is hard finding time to shop, have the staples and make a nutricious meal that does not take me all night.

    My biggest challenge is that I never know what time hubby will be home, our business is supposed to close at 6, but it never does. I love my crock pot tho, can’t remember the last time I cooked something without it. I use it most of the meals.

    My biggest challenge to getting dinner on the table on weeknights is that everyone seems to be on a different schedule. My husband gets home late some nights and the kids need to eat earlier so they can get to bed at a decent time. Plus the kids are starving for a snack right after school.

    My biggest challenge is what to make and when to make it. First, my husband and my daughter are EXTREMELY picky eaters!! But then, my husband’s schedule isn’t ever set in stone, so I never really know when exactly he will be home. Meals are frustrating…I should just start cooking large amounts for myself when I get hungry and everyone else can work around me. ;)

    I would say my hardest time is i am right now a single mom with three small kiddo’s under the age of four. So when it tie to start dinner that is when all the craziness comes out. All the “mammy I need”, “mommy can you”, “he did this or that” and on and on.
    So a wonderful crockpot would be great as a dear friend not know I don’t have one just send me crockpot meals to help me in this crazy time till daddy returns home from over seas.

    Okay….I have five kids: 4 boys, 1 girl…and three stepsons that come to visit. It takes all my energy just to keep up on the laundry.

    Now, I already have a crock pot….BUT, another one would be so nice. Do you realize how much all these boys eat? See, your crock pot says it will feed 6-8…um, not in my house! I definitely have enough counter space for two crock pots, in case you were worrying about that issue!

    I can’t even begin to imagine what it would be like to actually have leftovers! (ok, I exagerrate, but really, you were smiling, right?)

    i have 2 small children and our biggest meal time delima is having all of our plates ready at the same time so that we all eat at the same time. it seems that my kids start eating before my husband and i are seated and they finish way before we do. they always want dessert while we are still eating our meal. i would love this crockpot! thanks for a great giveaway.

    What is your biggest challenge when it comes to weeknight dinners?

    My biggest challenge is because when the weekend hits everything has to be done in those 2 short days; laundry, grocery shopping, spending quality time with the husband and kids, doing something fun, getting out of the house without the car being put into automatic to drive to work….and relaxing somewhere in that time.

    Before I got so busy with life I use to love my crock pot but it is an old one, no fancy timer so I had better be home or it will be burnt.

    The thought of walking in the door to a ready hot meal that is filling my home with yumminess without hurrying to make it sounds wonderful.

    Would love, love, love to have one of the crockpots as I am retired and my hubby is feeling the pain!!!!!! Would be nice to bring something exciting to the table. My old one is crocked out:-)!!!
