multi-grain waffles

This morning the kids and I made breakfast together.  We had a lot of fun together and it was a good reminder for all of us to keep trying to find ways to spend this kind of time togeher.  We are all so busy these days and it seems as if our time to just stay home and enjoy each other is always being interupted by one thing or another.

The truth is though that most of these distractions can easily be eliminated.  It’s not hard to turn off the TV or the computer.  It’s not hard to tell the neighbors that you’ll play with them later. It’s not hard to get up a little extra early and not sleep in all morning.  It’s not hard to put down the book or the newspaper.  It just isn’t and the reward is so much better than what we are giving up.

Here’s what we cooked up this morning.  They were delicious and being multigrained, they are good for you :O)

Ingredients

  • 4 cups straberries, sliced
  • 2 tbsp sugar
  • 2 cups nonfat buttermilk*
  • 1/2 cup rolled oats
  • 2/3 cup whole-wheat flour
  • 2/3 cup all purpose flour
  • 1/4 cup toasted wheat germ OR cornmeal
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs, slightly beaten
  • 1/4 cup packed brown sugar
  • 1 tbsp canola oil**
  • 2 tsp vanilla extract

Directions

  1. Combine strawberries and sugar in a medium bowl; toss to coat.  Let stand at room temp until the berries start to give off juice (20-30 min)
  2. Meanwhile, mix buttermilk and oats in a medium bowl; let stand for 15 minutes (this allows the oats to soften)
  3. Whisk flours, wheat germ (or cornmeal) , baking powder, cinnamon, baking soda, and salt in large bowl
  4. Stir eggs, brown sugar, oil and vanilla into the oat mixture.  Add the wet ingredients to the dry ingredients; mix with a rubber spatula just until moistened.
  5. Coat waffle iron with cooking spray and preheat. Spoon in enough batter to cover 3/4 of the surface.  Cook until the waffles are crisp and golden brown (4-5 minutes).  Repeat with remaining batter and serve topped with strawberries.

*If you don’t have buttermilk on hand you can sour milk by adding 1 tbsp lemon juice or vinegar to 1 cup milk.  You can also use buttermilk powder prepared according to package directions.

**This recipe calls for canola oil because it is one of the healthier oils but you can substitute vegetable oil if that is what you have on hand.

You can also use this batter to make pancakes!!! Also, you can store leftover waffles wrap in plastic wrap or in a ziploc bag or in the fridge for up to 2 days or in the freezer for a month and just reheat in the toaster.

    WOW! Only 4 points per serving? That sounds FABULOUS!

    I will try it for the pancakes since we are traveling light these days and don’t have a waffle iron handy.
