  • 1 tsp worcestershire sauce
  • 8 oz frozen mixed veggies (carrots, peas, corn), thawed
  • 1/4 cup shredded cheddear cheese (optional)
  • 16oz container mashed potatoes

DescriptionDescription  Comfort food..FAST! A simple version of a traditional favorite, this is perfect for those cool fall evenings or, as in my home, the nights you have a short amount of time to put dinner on the table. Easy enough for the kids to help with.
InstructionsInstructions  
  • heat oven to 400
  • in a large skillet, cook beef over medium-high heat until all trace of pink is gone (about 5 min)
  • drain extra fat
  • stir in ketchup and Worcestershire
  • add veggies and cook, stirring for 1 minute
  • spoon beef mixture into baking dish
  • if using cheese, mix into mashed potatoes in medium bowl
  • spread potatoes over beef and bake until heated through (about 10 min)
  • divide among individual plates
NotesNotes  
  • The recipe calls for a pre-made container of mashed potatoes like the kind Country Crock makes but we like to use Potatoe Buds (spuds in a box). If extra time is on hand, I make the mashed from scratch.

  • Instead of using ketchup w/ worchecestershire sauce you can substitute beef gravy if you prefer.
