Easy Shepherd's Pie
Ingredients
1 lb
ground beef
1/3 cup
ketchup
1 tsp
worcestershire sauce
8 oz
frozen mixed veggies (carrots, peas, corn), thawed
1/4 cup
shredded cheddear cheese (optional)
16oz container
mashed potatoes

Description
Comfort food..FAST! A simple version of a traditional favorite, this is perfect for those cool fall evenings or, as in my home, the nights you have a short amount of time to put dinner on the table. Easy enough for the kids to help with.
Instructions
heat oven to 400
in a large skillet, cook beef over medium-high heat until all trace of pink is gone (about 5 min)
drain extra fat
stir in ketchup and Worcestershire
add veggies and cook, stirring for 1 minute
spoon beef mixture into baking dish
if using cheese, mix into mashed potatoes in medium bowl
spread potatoes over beef and bake until heated through (about 10 min)
divide among individual plates
Notes
The recipe calls for a pre-made container of mashed potatoes like the kind Country Crock makes but we like to use Potatoe Buds (spuds in a box). If extra time is on hand, I make the mashed from scratch.
Instead of using ketchup w/ worchecestershire sauce you can substitute beef gravy if you prefer.
