  • 1/4 cup mayonaise
  • 2 tbsp lime juice
  • 1 tsp sugar
  • 2 1/1 tsp divided ground cumin
  • salt and pepper
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can black beans, drained BUT NOT rinsed
  • 2 eggs
  • 2 tbsp chopped cilantro
  • hot pepper sauce such as Tabasco
  • 1/2 cup flour
  • veggie oil for frying
  • 1/4 cup olive oil

    This recipe calls for the use of Lime Dressing. Use the following recipe:
    Lime Dressing
    in a non reactive bowl, whisk together
  • ¼ cup olive oil
  • ¼ cup mayo
  • 2 tbsp lime juice
  • 1 tsp sugar
  • ½ tsp ground cumin
  • Salt and pepper

  • For Black Bean Cakes
  • combine dressing and the avocados and mash until smooth, set aside
  • in food processor or blender, process the unrinsed black beans, eggs, chopped cilantro, cumin, slat and hot sauce until combined
  • stir in the flour and rinsed black beans

  • in large skillet, heat 1 tbsp oil over med heat
  • working in batches, drop rounded tbsp of the black bean mixture into the pan and fry, turning once, until crisp (about 4 min each side)
  • add more oil btwn batches if necessary

  • top w/ guacamole and cilantro leaves
