Black Bean Cakes w/ Guacamole
Ingredients
1/4 cup
mayonaise
2 tbsp
lime juice
1 tsp
sugar
2 1/1 tsp divided
ground cumin
salt and pepper

15 oz can black beans, drained and rinsed

15 oz can black beans, drained BUT NOT rinsed
2
eggs
2 tbsp
chopped cilantro
hot pepper sauce such as Tabasco
1/2 cup
flour
veggie oil for frying
1/4 cup
olive oil

Description
an easy appetizer for dinner parties or a great afternoon snack for the kids
Instructions
This recipe calls for the use of Lime Dressing. Use the following recipe:
Lime Dressing
in a non reactive bowl, whisk together
¼ cup olive oil
¼ cup mayo
2 tbsp lime juice
1 tsp sugar
½ tsp ground cumin
Salt and pepper
For Black Bean Cakes
combine dressing and the avocados and mash until smooth, set aside
in food processor or blender, process the unrinsed black beans, eggs, chopped cilantro, cumin, slat and hot sauce until combined
stir in the flour and rinsed black beans
in large skillet, heat 1 tbsp oil over med heat
working in batches, drop rounded tbsp of the black bean mixture into the pan and fry, turning once, until crisp (about 4 min each side)
add more oil btwn batches if necessary
top w/ guacamole and cilantro leaves
