Enchilada Casserole

Description
An easy one dish meal that is a favorite here. A great meal for the kids to help prepare.
Instructions
preheat oven to 350
spray 9 x 13 casserole dish with cooking spray
lay 6 tortillas on bottom of dish
layer beans, meat, corn, olives, and onions on top of tortillas
cover with remaining tortillas
pour enchilada sauce over tortillas and sprinkle cheese on top
bake covered (foil works great) for 30 to 45 minutes until sauce is bubbling and cheese is melted
Notes
Can be made with either green or red enchilada sauce depending on your preference. Jazz up the dish green onion, sour cream or guacamole on the side.
