  • 12 corn tortillas
  • 2 14.5 oz cans refried beans
  • 1 lb ground beef, cooked
  • 1 14.5 oz can whole kernel corn, drained
  • 1 14.5 oz can echilada sauce
  • 1 small can sliced olives, drained
  • 1/2 small red onion, chopped
  • 1 package shredded cheese, mexican blend

DescriptionDescription  An easy one dish meal that is a favorite here. A great meal for the kids to help prepare.
InstructionsInstructions  
  • preheat oven to 350
  • spray 9 x 13 casserole dish with cooking spray
  • lay 6 tortillas on bottom of dish
  • layer beans, meat, corn, olives, and onions on top of tortillas
  • cover with remaining tortillas
  • pour enchilada sauce over tortillas and sprinkle cheese on top
  • bake covered (foil works great) for 30 to 45 minutes until sauce is bubbling and cheese is melted
NotesNotes  Can be made with either green or red enchilada sauce depending on your preference. Jazz up the dish green onion, sour cream or guacamole on the side.
