Linguine w/ Bacon and Onions

linguine pasta
3/4 pound
bacon, chopped
2 large
onions, thinly sliced
2 large
egg yolks (no whites)
parmesan cheese for topping

Description
An easy tasty pasta dish. One of those things to make when you don't have a lot on hand or need to fix up something last minute.
Instructions
Cook pasta until al dente reserving 1 1/2 cup pasta water.
In large deep skillet, cook the bacon over medium heat until crisp.
Discard al lbut 3 tbsp bacon fat then add the onions to the skillet.
Cook over medium-high heat, stirring until softened.
Add the pasta cooking water and bring to a boil. Stir in the Linguine and
remove from the heat.
Stir in the egg yolks, one at a time.
Add the bacon, season with pepper and sprinkle with parmesan.
Notes
There is another recipe around here that is very similar and calls for the addition of thawed frozen peas - it is so yummy! and an easy way to make this an all in one dish.
