  • 1 pound linguine pasta
  • 3/4 pound bacon, chopped
  • 2 large onions, thinly sliced
  • 2 large egg yolks (no whites)
  • parmesan cheese for topping

DescriptionDescription  An easy tasty pasta dish. One of those things to make when you don't have a lot on hand or need to fix up something last minute.
InstructionsInstructions  
  • Cook pasta until al dente reserving 1 1/2 cup pasta water.
  • In large deep skillet, cook the bacon over medium heat until crisp.
  • Discard al lbut 3 tbsp bacon fat then add the onions to the skillet.
  • Cook over medium-high heat, stirring until softened.
  • Add the pasta cooking water and bring to a boil. Stir in the Linguine and
  • remove from the heat.
  • Stir in the egg yolks, one at a time.
  • Add the bacon, season with pepper and sprinkle with parmesan.
NotesNotes  There is another recipe around here that is very similar and calls for the addition of thawed frozen peas - it is so yummy! and an easy way to make this an all in one dish.
