Curried Lentil in Tomato SauceCurried Lentil in Tomato Sauce

  • 3 tbsp vegetable oil
  • 1 medium onion finely chopped
  • 1 fresh ginger (2 inches), peeled and finely grated
  • coarse salt
  • 2 tsp curry powder
  • 1 tsp gararm masala
  • 1/4 to 1/2 tsp cayenne pepper
  • One 26 oz tomato saue
  • Two 20 oz cans cooked lentils, rinsed and drained
  • 2 tbsp fresh lime juice (approx one lime)
  • 1/2 cup chopped fresh cilantro
  • cooked basmati or other long grain white rice for serving
  • 1 cup water

  • In a large saucepan, heat oil over medium heat
  • Add onion and ginger; season with salt
  • Cook stirring frequently until beginning to brown (5 to 8 minutes)
  • Add spices (curry powder, garam masala, cayenne pepper); cook, stirring until fragrant (30-60 seconds)
  • Add tomato sauce, lentils, and 1 cup water
  • Simmer until slightly thickened (5 to 10 minutes)
  • Stir in lime juice and cilantro; season with salt
  • Serve over cook rice and garnish with cilantro if desired.
    NotesNotes  
    • If, like me, you cannot find canned lentils ANYWHERE, you can prepare your own. Just keep in mind that the lentils will take about one hour to cook on the stove. For this recipe, cook 1 1/2 cup dry lentils in 3 cups water. Bring to boil, turn heat to low and simmer until most of water is absorbed (about 20 -30 minutes)

    • I have a little guy who doesn't like his food too spicy and even though I skimp on the cayenne pepper, this still comes out to spicy for him. To cut the spice, you can add salt, lemon/lime juice or plain yogurt. All three go well with this recipe<.li>
