  • 1 6 count pkg XLNT tamales
  • 1 40 oz can chili con carne wi/ beans
  • 2 15 oz can whole kernel corn, drained
  • 2 15 oz large pitted olives, drained
  • 2 eggs, lightly beaten
  • grated cheddar cheese for topping

DescriptionDescription  Soooo Easy!! This recipe was handed down to me from my mom. It is the first dish I learned to cook "all by myslef". A definite favorite in our home and a fabulous dish for potlucks or a cold fall/winter evening. LIke many recipes here, this one is a great dish to have the kids help with.
InstructionsInstructions  
  • preheat oven to 350 degrees
  • unwrap and cut each tamal into six peices, add to casserole dish
  • add chili, corn and olives
  • add eggs to dish and mix all ingredients
  • cover and cook for 45 minutes (foil works great)
  • remove from oven and added cheese on top
  • let stand 5 minutes to allow cheese to melt
  • serve and enjoy
NotesNotes  I use XLNT brand tamales but I am sure that you can use another brand if you wish. I would recommend a frozen variety.
